Stir-fry with noodles and mussels
Ingredients (1 person):- 2 spring onions
- 2 cloves of garlic
- 2 cm fresh ginger or
- 1 teaspoon of ginger powder
- approximately 125 g pods
- ½ yellow and ½ red pepper
- ½ cucumber
- 1 lime
- 1 kg mussels
- 2 tablespoon of cooking oil
- 3 to 4 tablespoons of light soya sauce
- 150 g stir-fry noodles
Stir-fry with noodles and mussels
Ingredients (1 person):- 2 spring onions
- 2 cloves of garlic
- 2 cm fresh ginger or
- 1 teaspoon of ginger powder
- approximately 125 g pods

- ½ cucumber
- 1 lime
- 1 kg mussels
- 2 tablespoon of cooking oil
- 3 to 4 tablespoons of light soya sauce
- 150 g stir-fry noodles
Preparing step by step:
- Cut the spring onions into sections of 1 cm.
- Finely chop the garlic and ginger.
- Clean the pods, cut the pepper into strips and the cucumber into slices.
- Wash the mussels in cold water. Check them and remove any that are broken.
- Bring water to the boil in order to cook the noodles.
- Stir-fry half of the garlic and ginger in a frying pan with 1 tablespoon of oil until glassy.
- Add the pepper and pods and briefly stir-fry them until they are crispy.
- Finally, add the cucumber and the soya sauce
- Cook the noodles in accordance with the instructions.
- In the meantime, fry the spring onions with the rest of the garlic and ginger in a large wok with 1 tablespoon of oil until glassy.
- Add the mussels, the lime juice and half a glass of water.
- Cover the mussels, bring to the boil and shake them until they open.
- Mix the vegetables through the mussels.
- Serve the noodles separately or mix them in.
