Preparing step by step:
- Mix the cream cheese with the mayonnaise into a creamy spread. Add salt and pepper to taste. Spread half of the bread with half of the herb spread.
- Cover the spread slices with the corn salad and the mussels. Lay the rest of the bread on top.
- Cut the sandwiches diagonally, twice. Sprinkle the chives onto a plate
- Spread one side of each sandwich with the rest of the herb spread and press in the chives. Use a cocktail stick to hold it together.
Tip For a lighter appetiser, replace the cream cheese and mayonnaise with dairy spread. E.g. with chives or paprika and herbs.
